When cooked, the fibers give the squash very distinctive strands that look a lot like orange spaghetti. You can’t eat spaghetti squash raw, and its best baked. The inside flesh is scraped out with a fork, to help bring out the “spaghetti” nature of the squash. Extremely high in vitamin A, good sources of potassium, fiber and vitamin C.
